Cooking spray, for pan
3/4 c. (1 1/2 sticks) butter, softened
3/4 c. packed brown sugar
1/4 c. plus 2 tablespoons granulated sugar
2 large eggs
1 tsp. pure vanilla extract
2 1/4 c. all-purpose flour
3/4 tsp. baking soda
3/4 tsp. kosher salt
1 3/4 c. mini chocolate chips, divided
- Preheat oven to 350° and line a large baking sheet with parchment paper, leaving a 1” overhang on each side of pan. Spray parchment with cooking spray.
- In a large bowl using a hand mixer, beat butter and sugars until light and fluffy. Add egg and vanilla and beat until combined. Add flour, baking soda and salt and mix until just combined. Fold in ¾ cup chocolate chips.
- Press dough into prepared pan in an even layer and sprinkle with remaining ½ cup chocolate chips, gently pressing into dough. Bake until edges are golden, about 20 minutes. Let cool in pan 10 minutes, then transfer to a wire rack to cool completely.
- Using a pizza cutter or sharp knife, slice cookie crosswise into long strips, then halve into shorter sticks.
