Lemon Meringue Pie



  • Ingredients for Dough:
  • Butter 100g
  • Castor Sugar 3 tbsp
  • Plain Flour (Sifted) 150g (12 tbsp Approximately)
  • Baking Powder 1 tbsp
  • Ingredients for Filling:
  • Egg Yolks 3
  • Castor Sugar 4 tbsp
  • Corn Flour 2tbsp
  • Milk 2 cups
  • Lemon Juice 2tbsp
  • Lemon Essence few drops
  • Yellow Food Color As Needed
  • Ingredients for Meringue:
  • Egg Whites 3
  • Cream of Tarter 1 pinch
  • Castor Sugar 100g (8tbsp aprox.)

Cooking Directions

  1. To Make Dough:
  2. In a bowl add 100g butter, 3tbsp castor sugar and 150g plain flour.
  3. Then add 1 tbsp baking powder in above mixture. 
  4. Mix these ingredients well.
  5. Prepare its dough with the help of cold water.
  6. Put the dough in pie plates of 8 inches.
  7. Place it in the oven (at 180 degrees) to bake for 20 minutes.
  8. To Make Filling: To prepare the custard, add 3 egg yolks in 2 cups of milk.
  9. Then add 4 tbsp of castor sugar and 2 tbsp of corn flour in above mixture. 
  10. Cook it in a pan for a while and let it cool.
  11. Now add 2 tbsp lemon juice and few drops of lemon essence.
  12. Also add yellow food color in the mixture and mix well.
  13. To Make Meringue: Beat 3 egg whites and mix 1 pinch of cream of tarter.
  14. Add 100g of castor sugar and beat them lightly.
  15. To Assemble: Place the prepared filling on the baked dough.
  16. Then on top of the filling add the meringue gently.
  17. Spread it over to all sides.
  18. Place the pie again in oven for 15 minutes at 180 degrees.
  19. Let it cool down for a while.
  20. The pie is ready to serve.
